- 1 medium sweet potato
- 1 large chicken breast
- 1 avocado
- 4 pieces of bacon
Preheat oven to 350
Place bacon on baking sheet with aluminum foil and set in oven for fifteen minutes. (Trust me, bacon in the oven is not only healthier but much more delicious)
Cook the sweet potato by which ever method you prefer (When i’m in a rush I just microwave it for 5-10 min)
While the sweet potato and bacon are cooking, dice up chicken into small cubes and throw into a large skillet with coconut oil.
Season how you like it and wait for chicken to cook.
Be sure to check the bacon so that you don’t over cook.
When the chicken is cooked through, slice the sweet potato and peel off the skin.
Throw the cooked sweet potato in the skillet with your chicken and sauté
This should create a chunky mash
Put in bowls
Breakup two pieces of bacon for each bowl, dice and add avocado
